Aloo Tikki (Indian Potato Cakes)

Ingredients

Unlimited:

  • 1 tsp x cumin
  • ¼ tsp x ginger
  • ¼ tsp x turmeric
  • ¼ tsp x onion salt
  • ¼ tsp x garlic salt
  • 1 x spring onion top
  • Black Pepper
  • Fresh Coriander

Limited:

  • 1 x birds eye chilli (optional)
  • 1 tsp x olive oil

Method

  • Make up the mashed potato sachet with ml of water.
  • Finely slice the spring onion top, chilli if using and coriander.
  • Mix all of the ingredients, spices, salts and season with black pepper.
  • Form into patties, you can do this with your hands or by pushing into a pastry cutter. You can make these small and bitesize or larger if you prefer.
  • Refrigerate for thirty minutes to allow the mix to infuse and set.
  • Heat the oil in non stick pan and gently colour the patties until nicely golden.
  • Place in the over at 200 degrees for between 8 and 15 minutes depending on how large the Aloo Tikki are.Why not serve with a nice refreshing slaw and herby salad or even a traditional green chutney!

Best thing since a slice of cake.!
