BOMBAY DAIKON

Ingredients

Unlimited:

  • 450ml x water
  • 1 x daikon radish
  • 1 tsp x ginger
  • 1tsp black mustard seeds
  • 2 tsp x ground coriander
  • ½ tsp turmeric
  • 1 tsp x cumin
  • 2 tsp x garam masala
  • 1 tsp x garlic salt
  • ½ tsp x chilli flakes
  • Chopped Coriander

Limited:

  • 75g x onion sliced
  • 75g x tomato diced
  • 1tbspn x olive oil

Equipment:

  • Pans
  • Casserole Dish
  • Colander
  • Spatula

Method

  • Peel the daikon and cut into large rustic chunks roughly 3cm square.
  • Add to a pan of cold salted water then bring to the boil for 20 –30 minutes until softened but not mushy.
  • Set to drain in a colander.
  • Preheat the oven to 180 degrees Celsius.
  • Add the olive oil into a warm pan and toast the spices over a medium heat for thirty seconds.
  • Add the onion & colour nicely followed by the tomato.
  • Next deglaze with the water and add the two sachets stirring constantly to avoid any lumps.
  • Add the daikon back to the mix and transfer to an oven proof dish/casserole. Cook in the oven without a lid for 20 –30 minutes checking at 10 minute intervals.
  • Finish with fresh coriander and serve as a main course or to accompany your favourite grilled vegetables.
