Bouillabaisse

Ingredients

Protein:

  • 150g x Fish –Halibut/Monkfish/Scallops/Mussels etc.

Unlimited:

  • 30g x Fennel –Sliced
  • Parsley
  • 2 x Star Anise
  • Pinch of Saffron
  • 200g x Fish Stock
  • Salt & Pepper

Limited:

  • 1 tbsp x Olive Oil
  • 100g x Tomato Sauce
  • 25g x Onion –Sliced
  • 10g x Leek –Sliced
  • 25g x Red Pepper –Sliced

Method

  • First,we make the sauce. Sweat the sliced vegetables in a pan with half the olive oil and the star anise.
  • Once nicely sweat off deglaze with the fish stock and bring to the boil. Adding a good pinch of saffron at this point.
  • Add the tomato sauce and parsley. Season with salt and pepper.
  • Sauté the fish of your choice until cooked three quarters of the way, deglaze with the juice of half a lemon then add your sauce.
  • Bring up to the boil and serve. I like to serve mine with some boiled mooli, but zoodles or cauliflower rice is equally awesome!

Best thing since a slice of cake.! After seeing a picture of myself at Christmas 2015, l decided to do something so l took the plunge and phoned Alevere.  Hard bit done, the diet is simple, follow it as advised, and watch the pounds fall off, and they literally did.  The hardest thing is walking through the doors, but remember everyone there is in your shoes. I feel 21 again.
