CARROT & CORIANDER SOUP

Ingredients

Unlimited:

  • 600ml x water
  • 50g x celery –sliced/grated
  • 50g x fennel –sliced/grated
  • 10g x coriander seed
  • Fresh coriander
  • Lemon juice
  • Satsuma zest
  • Salt & pepper

Limited:

  • 200Gx carrots –sliced/grated
  • 25ml x olive oil

Method

  • 1.Sweat the celery, fennel, carrots, coriander seed and a few coriander stalks in olive oil.
  • 2.Once softened add the water and the sachet and bring to the boil.
  • 3.Simmer for 5 –10 minutes.
  • 4.Blend until smooth adding a chopped coriander to taste.
  • 5.Pass through a sieve if required.
  • 6.Season with salt, pepper and lemon juice to taste.
  • 7.Garnish with freshly chopped coriander& satsuma zest.

Best thing since a slice of cake.!
