Cauliflower Cheese Croquette

Ingredients

Unlimited:

  • ¼ tsp x garlic salt
  • ¼ tsp x onion salt
  • nutmeg
  • Chives
  • Salt & pepper

Limited:

  • 90g x Cauliflower Puree
  • 1 x egg white

Method

  • Firstly make the cauliflower puree by boiling cauliflower florets in salted water until soft, drain and blend until smooth.
  • Add the Mashed potato sachet to a bowl with the salts, pepper, herbs and cauliflower puree. Mix to form a paste.Add the nutmeg to your taste preference.
  • Place a double layer of cling film on the bench and place your mix onto the cling film. Roll into a sausage shape and tieboth ends.
  • Allow to set in the fridge for half an hour.
  • Blend the cheese and onion crisps to a powder.
  • Remove your sausage from the fridge and trim both ends. Cut in half and remove the cling film.
  • Roll each croquette in the egg white and then the powdered crisps, repeat the process until fully crumbed.
  • Bake in the oven at 180 degrees Celsius for 8 to 10 minutes and serve.*** I love to eat this dish with some peppery rocket and yoghurt with garlic salt.
