Cauliflower Kheer (Indian Rice Pudding)

Ingredients

Sachet:

  • Vanilla Dessert

Unlimited:

  • 1 x Pinch Saffron
  • 150g x Water
  • 1 x Cinnamon Stick
  • Dried Rose Petals
  • Satsuma Zes
  • t2 x Cardamom Pods
  • 2 x Drops Almond Extract

Limited:

  • 200g x Cauliflower Rice
  • 2 tsp x Sukrin Gold

Method

  • Firstly, microwave the cauliflower rice for 2 minutes or until slightly softened.
  • Add the sachet and water to a jug and mix until smooth.
  • To the jug add the sugar and all of the spices. Microwave for one minute until warmed to a custard.
  • Transfer the cauliflower to a pan and add the warm custard.
  • Over a gentle heat cook for 1-2 minutes until combined and infused.
  • Transfer to a bowl or ramekin, you can enjoy this dish hot or cold. I like to let the kheer cool to room temperature and infuse in the fridge overnight.
