Fish Stock (Fish Fumet)

Ingredients

Unlimited:

  • 3kg White Fish Bones
  • Parsley Stalks
  • 2 x Bay Leaves
  • 4 x Celery Sticks
  • Sprig of Thyme
  • Parsley Stalks
  • 10 x peppercorns
  • 2 x Star Anise

Limited:

  • 2 x Onions –Quartered
  • 2 x Leeks Peeled and Halved

Method

  • Place all ingredients into a pan.
  • Add five litres of cold water to the pan and turn on the heat. Bring to a boil and then turn down to a simmer.
  • Any excess fat/ scum will float on the top, remove this using a ladle.
  • Simmer for twenty to thirty minutes.
  • Remove from the heat. Now pass your stock through a fine sieve/muslin into another pan using a ladle.
  • Your stock is now ready to use.
  • This can be used as a base for a soup/sauce, or you can enjoy this a super tasty and healthy beverage.

Best thing since a slice of cake.! After seeing a picture of myself at Christmas 2015, l decided to do something so l took the plunge and phoned Alevere.  Hard bit done, the diet is simple, follow it as advised, and watch the pounds fall off, and they literally did.  The hardest thing is walking through the doors, but remember everyone there is in your shoes. I feel 21 again.
