Jalapenos

Ingredients

Unlimited:

  • 1 cup/240mlapple cider vinegar (any light vinegar will work)
  • 1 cup/240mlwater
  • 1 tbsp.salt
  • 1 Bay leaf
  • 1 tsp Peppercorns
  • 1 tsp oregano

Limited:

  • 240g Jalapeno or chillies of choice
  • 1tblsp artificial sweetener

Method

  • Slice your Jalapenos or chillies of choice, be sure to wear gloves to avoid any spicy accidents.
  • Bring everything except the jalapenos to a boil in a pan.
  • Add the jalapenos and bring back to the boil.
  • Sieve out the jalapenos and place in a sterilised jar, pour the liquid over.
  • Allow to cool completely.
  • These will keep in the fridge for up to 3 months as long as the jalapenos are submerged in the pickle.
